Ever since its opening in the fall of 2025, the Red and Blue Brew Café has offered an on-campus opportunity to buy fun and unique drinks, sold by student volunteers.
Founded in an attempt to combat the decline of the old coffee shop, Café Justo, the Red and Blue Brew Café has sought to become a consistent part of student life at La Salle.
According to Director of Community and Student Leadership Mr. Quinn Peoples, over 600 Falcon Fuels have been sold since the opening of the cafe, along with popular drinks such as Italian sodas, with over 200 sold, and chais, with over 120 sold.
Falcon Fuels have been a fan favorite due to the range of flavors and seasonal options available, with the most popular flavors being, “either strawberry or raspberry flavored,” sophomore Ximena Carrillo, one of the Café’s workers, said.
One of Carrillo’s personal favorites is a mango peach Falcon Fuel, which she described as having, “a very tropical taste, so if you really like that it also gives a summer vibe.”
Junior Sammy Uicker agreed, while also suggesting that students try the drink not only for its flavor, but also because, “it gives me energy on days when I have hard classes,” he said.
Carrillo also mentioned that another frequently purchased drink was the Café’s iced latte, which now comes with the optional addition of caramel.
Senior Eleanor Simpson enjoys an iced mocha, which she appreciates due to the amount of potential flavors that can be added. And at the low price of four dollars, for her, the drink is “well worth it,” she said.
“It’s a cheap option when you can’t go every day in the morning [to other coffee shops] and when you don’t have time,” she said.
Simpson also emphasizes how the drink is “a good pick-me-up before your last class of the day,” she said.
Apart from the Falcon Fuels and various coffee orders, the Red and Blue Brew Café also has a number of other fun drinks and non-caffeinated options.
“I would recommend people to try our matcha and also our chai,” Carrillo said.
Aside from purchasing drinks, students can also sign up to work in the Red and Blue Brew Café to receive service hours, typically before school or during certain lunches.
“It’s definitely a nice environment,” Carrillo said. “It’s very enthusiastic, and you get to enjoy yourself while working.”

The cafe has been a shining example of entrepreneurship, leadership, and fun! I respect and admire how hard the students have worked to build this program!
